Sun-Dried Tomato and Pesto Orzo

My favorite recipes are ones that are simple and adaptable. This one can be thrown together in just minutes and modified with whatever you have on hand! It is great served warm or chilled and would pair well with grilled chicken or salmon for a heartier meal.

Recipe:

Ingredients:

1lb Orzo Pasta (or pasta of choice)

2 Cups Baby Arugala

1/2 Cup Sun-Dried Tomatoes, Chopped

2 14oz Cans Quartered Artichoke Hearts in water or brine

3/4 Cup Basil Pesto

Salt

Pepper




Instructions:

  1. Bring a large pot of salted water to a boil.

  2. Chop sun-dried tomatoes.

  3. Drain artichoke hearts and set aside.

  4. Add orzo or pasta of choice to boiling water and cook until al dente according to package directions.

  5. In a large pan sauté sun-dried tomatoes and artichokes over medium heat for 3-4 minutes or until warm. Season with salt and pepper to taste.

  6. Drain pasta and mix in sun-dried tomatoes, artichokes, and pesto.

  7. Top or toss with arugula when ready to serve!
