Veggie Hummus Bagel Sandwich
When my favorite bagel shop opened in Philadelphia years ago their original menu included a veggie hummus sandwich that I absolutely loved. And while they no longer make it and I no longer live a couple of blocks away, I still crave it! This recipe is my take on that sandwich. And to be honest, it is less of a recipe and more of a short list of ingredients that need assembled into a sandwich. It’s creamy, crunchy, and delicious and ready in 5 minutes! I highly recommend getting fresh bagels if at all possible. I like to buy several, cut them and store in my freezer. Easy!

Ingredients:
4 Everything Bagels, sliced
1/2 Cup Roasted Red Pepper Hummus
2 Avocados, cut in half then sliced
1 Cup Baby or Seedless Cucumber, sliced
1 Cup Alfalfa Sprouts
Salt (optional)
Instructions:
Spread 1 Tbs Roasted Red Pepper Hummus on each bagel half
Places slices from 1/2 avocado on each sandwich
Add pinch of salt to avocado if desired.
Add layer of sliced cucumber and alfalfa sprouts to each sandwich
Close sandwich halves, cut and enjoy!
