Veggie Hummus Bagel Sandwich

When my favorite bagel shop opened in Philadelphia years ago their original menu included a veggie hummus sandwich that I absolutely loved. And while they no longer make it and I no longer live a couple of blocks away, I still crave it! This recipe is my take on that sandwich. And to be honest, it is less of a recipe and more of a short list of ingredients that need assembled into a sandwich. It’s creamy, crunchy, and delicious and ready in 5 minutes! I highly recommend getting fresh bagels if at all possible. I like to buy several, cut them and store in my freezer. Easy!

Prep Time: 5 minutes

Cook Time: 0 minutes

Total Time: 5 minutes

Servings: 4

Ingredients:

4 Everything Bagels, sliced

1/2 Cup Roasted Red Pepper Hummus

2 Avocados, cut in half then sliced

1 Cup Baby or Seedless Cucumber, sliced

1 Cup Alfalfa Sprouts

Salt (optional)

Instructions:

  1. Spread 1 Tbs Roasted Red Pepper Hummus on each bagel half

  2. Places slices from 1/2 avocado on each sandwich

  3. Add pinch of salt to avocado if desired.

  4. Add layer of sliced cucumber and alfalfa sprouts to each sandwich

  5. Close sandwich halves, cut and enjoy!
